How to Make CannaCream

So many recipes call for cream - alfredos, Vodka sauce, white gravy, quiche, mashed potatoes, scallop potatoes, mac and cheese, creamy salmon, tarragon sauce, stroganoff, steak diane, ravioli, coffee recipes, countless desserts and so much more.  

If you can infuse heavy cream with decarbed bud, you can open the doors to many incredible recipes that’ll leave you and yours elevated and full. If you haven’t read our primer on cooking with cannabis or the article on decarbing, feel free to start there and head back over here.  

What you need:

unchecked Stockpot or large saucepan

unchecked 2 mason jars

unchecked Cheesecloth or coffee filter

unchecked Oven mitt

unchecked A strainer

unchecked Kitchen tongs

unchecked 1 pint of heavy cream

unchecked 3.5g of decarbed cannabis

We want to use heavy whipping cream if possible.  Half and half or whole milk can also work but because THC molecules are so highly fat soluble, we want as much fat as possible for our THC to bind to.  For non-dairy individuals, coconut milk is the best alternative to full-fat dairy products due to its fat content.

We always need to talk about dosing in our recipes.  There’s a ton of variability so this isn’t an exact science.  An eighth (3.5g) of decarbed flower at 20% potency yields approximately 600mg of THC in the cream after the decarb process and infusion - approximately 15mg per 1-tablespoon serving.

Here’s how we do it:

  1. Fill the mason jar with the decarbed cannabis and the cream and close the lid
  2. Place the jar in the pot and fill the pot with enough water to cover the jar up to the lid
  3. Set the stovetop on medium-high heat to start, reducing it to low-medium before it boils
  4. Let the cannacream simmer in the hot water bath for about two hours, adding water as it steams off
  5. Approximately halfway through simmering, pull the jar out with the tongs and slightly open the seal (using oven mitts) to relieve built-up pressure
  6. After the two hours are over, remove the jar from the water again and let it rest for a few minutes.  
  7. Line the strainer with the cheesecloth or a coffee filter and place it over the second mason jar.  Strain the warm, liquid creamer through the filter to remove the plant matter.  Discard the filter and flower remnants.
